Sriracha

Most sriracha recipes are fermented. Unfortunately, safely ferment- ing requires a relatively large amount of salt. This recipe skips the longer fermentation period (and all that sodium), yielding a lovely fresh alternative to the traditional “rooster sauce.” Can’t find red chilies? Just use green ones—your sriracha will be green, but taste just as delicious.
