Banana Bread

Several years ago, I shot a banana bread recipe for Epicurious, and it became my go-to banana bread. When I first started on a low-sodium diet, I had some friends over, and I made this low sodium version of that recipe so I could have something to snack on while everyone else was munching down on cheese and crackers. Not realizing it was low sodium, my friends devoured it—even those that claimed that they didn’t like banana bread! And it’s been a request ever since.

A lot of banana breads load up on mix-ins such as nuts or chocolate chips. If that’s what you like, by all means, add away. But also give it a shot the simple way. I think you’ll be pleasantly surprised.
