Cornish Pasties

Cornish pasties are another of the recipes from my family’s repertoire. These savory pastries were traditionally eaten by miners in the copper mines of Cornwall, England, and then somehow made their way to Upper Michigan and the northern Midwest, and, along the road, to my family’s table. They are similar to calzones, but packed with meat and potatoes instead of tomato and cheese. Each pastry typically has the initials of the eater carved into the top, so it’s easy to customize the filling for individual tastes and add a bit more salt for those not on a low sodium diet.
