Lemon Cupcakes
I am not a fan of cupcakes that have more frosting than cake, particularly when that frosting is a dense block of sugared butter. I always end up scraping most of it off to enjoy the cake beneath. These lemon cupcakes are frosted with a subtly sweet lemon whipped cream, which is like eating a lemon cloud. No scraping needed.
