Refried Beans

While refried beans are traditionally made with pinto beans, you can make them with just about any variety. I like them with black beans, in particular, but also try them with great northern beans, black-eyed peas, or cranberry beans. A pile of beans, a couple of eggs, and a healthy swirl of red or green chile sauce on top is a great meal any time of the day.
