Vegetarian Bolognese

The first time I made Marcella Hazan’s classic and utterly delicious Bolognese sauce, I made a typical rookie mistake and didn’t read through the time the recipe takes. It’s ground beef, how long can it take to make? Well, as it turns out, “at least” four hours. Oops. Dinner was late that night.

You won’t have that trouble with this veggie version, which takes less than an hour to make and is much lower in sodium than the traditional sauce but is still as hearty. It’s the perfect low-sodium, meatless Monday night dinner.
