I learned the basics of this recipe from the “piechiatrist” herself, Kate McDermott, James Beard Award–nominated author of Art of the Pie. Although her recipe can be made as is without the salt, it is then really bland. I like my pie crust to have a little flavor, and by using a little light salt, sugar, and a splash of vinegar, you get a pie crust worth nibbling on even without any filling.
