Baked Apple & Blueberry Oatmeal

I ate a lot of oatmeal when I was first diagnosed with Ménière’s disease, because it was easy to make it low sodium, but although I like oatmeal porridge, it does get rather tiresome. This baked oatmeal, on the other hand, is a treat any day.

I’ve used apples and blueberries in this recipe, but try substituting other fruits and berries. Cranberries and oranges make a great combination in winter, or strawberry and rhubarb in spring. I use steel- cut oats, which have a firmer texture, but rolled oats work great too.
