Here’s a spin on a homemade low-sodium bacon technique I learned from Jessica Goldman Foung’s Sodium Girl blog. It slow-cooks sea- soned strips of pork belly instead of using the traditional cure-and- smoke method. I’m not going to lie to you: this bacon is definitely more meaty and significantly less salty than the traditional kind. I wouldn’t try to pass it off as bacon to my salt-indulging friends. But if your palate has already adjusted to low-sodium foods, your breakfast and club sandwiches can get back to bacon-y goodness.
